A shelf grind roller cam is ~$250. A new cam will need new springs which can cost anywhere from $100-500. Other parts such as retainers, rocker arms, etc. may be needed as will gaskets, etc. Labor will vary a lot depending on the make and model and year and labor rate. That's why there is no simple answer. A 4th, for example, is not easy to work on. A cam replacement is a full days work. So, multiply the labor rate in your area by 8-10 hours and add parts. In my area the only guy you would want to do it is ~$90/h. So, a ballpark for a stock LT1 including a set of roller rockers would be close to $2,000.
