Whether they will rub depends on the offset and width of the wheel you put them on.

40, yep. Do people massage the inner fender more to clear room for the width of the tire or heighth or usually both? I'll be putting these on 10s in the rear.
Also, how would 275s look on the front with 10s compared to the 285/10s in the rear? The other option would be using 8s in the front...but what would be the best width tire for that, 255?

Whether you will have a problem depends on the offset of the wheel.
To large an offset, and the inside edge of the tire is into the inner fender liner (hammering required) and the inside edge of the rim can catch on the bump stop bracket (cut-off or grinding required). Too little offset, and the outside edge of the tire is right under the fender lip, and the lip cuts into the edge of the tire (roll the lip). Way too little offset, and the tire is outside of the fender and on a lowered car, the fender rides on top of the tire. Generally, you don't get into trouble with the top surface of the tire going up into the fender liner. I had my car down 1" in the back with 275/40-17's and a 17x9.5" 49mm offset wheel, and nothing hit anywhere.
With a 285/40-17 and the correct offset (45-56mm), you will not have any problems - as long as the wheel has the correct offset.
I think you will find there is very little difference in the appearance of the 275/40 and the 285/40. If you start looking at different brands, some manufacturer's 275's are just about the same width as other manufacturer's 285's. I'd put the same tire on all 4 corners if you want to be able to extend the tire life by rotating them.

Ok, so 285/40-17s all around on 10s should work with the Prokit, cool. The other option I am considering primarily for aesthetic reasons would be 8s in the front. I've always liked a smaller whell in the front. Would 255s be best on 8s and are there any negatives to 8s in the front and 10s in the back other than not being able to rotate? How much more mileage do you really get by rotating tires?
