I had pretty good luck with the 3500 stall when I had my HotCam.

With stock heads mine seems to pull pretty good up to 6300 or so.

I have the HOTcam, and ported heads with larger valves..... With a 2800 stall I'm pulling 1.8X short times on drag radials, that should be good enough for ya, and the 2800 stall is ok for daily driving.

but if the powerband is from 3000 to 6500 your stall gotta be at least 3000.

If you want to get technical about it, I think you are supposed to pick your stall so that it's about 400 RPM below your torque peak.

I wouldn't really say that is getting technical about it. Torque curves look different for different types of motors. That is just a rule of thumb. According to that I'd pick a 1700 stall for my car, i don't think so.

Gregg 97Z has a hotcam dyno with stock heads. I'd ask him to see it. I used to have it but can't find it.

Well most people don't try and match their converter to their stock cam. Most likely you would match the converter to some cam you would like to install in the future.

Here's my hotcam dyno numbers. The spikes after 5300 were due to knock I was getting from a vibration in the catalitic converter (I'm pretty sure) which is now fixed. I was using a stock 3" cat at that time which is now gone, I've replaced it with an ORP/cutout.
