I did read it, I guess I was just too impatient to test things and went ahead and bought a sensor to hopefully just be done with it. I asked if it was a wiring issue because even if the fans come on with the A/C that doesn't mean that all the wiring (like from the temp sensor to the PCM and others) is good... but I'm going to test it like you recommended on your site and see what I can figure out.

I meant wiring from PCM to the relays and fans (the temp sensor is not directly in play when you turn on the a/c). Following the tests on my page will tell you if the PCM is reading the sensor ok.

Update: Tested the wire that connects to the Coolant Temperature Sensor and it checked out, also tested the sensor itself and it checked out. Then pulled the PCM Bat fuse for 30 seconds and reset the PCM to no avail. So I'm sure it's not those and I believe my sensor for the gauge is reading right, so I'm again stumped...

If you don't monitor it with a scanner, you don't know what the PCM sees (even if the wires check out). I don't see how anyone troubleshoots without a scanner.

A scanner pays for itself very quickly. A diagnosis at a shop takes money out of your wallet and doesn't help with your next trouble. A scanner does not guarantee a solution to your problem, but it can easily point you in the right direction.
A scanner is a needed tool, just like a screwdriver and a wrench for a modern car.

Alright I will look in to getting one, all I need is a cable and some program like Datamaster and then if I want to tune I can get Tunercat, right?

Yes. Those would be two good choices.

Just bought datamaster and hooked it up to my car and idled a little bit today. Need some help on interpreting and stuff... But from what I can see I'm not throwing any codes. So some advice?

This may help you understand some of the data:

http://www.injuneer.com/ScanMast.html

If you run a DataMaster data log, you can upload the file to an FTP site, and post the link..... there are several people here who will generally take a look at the logs and offer help. If you do upload it, the DataMaster files are in a ".uni" format, and only DataMaster can open them. If you use the "export" routine in DataMaster, it will produce a ".csv" file that can be opened with Excel. Upload both versions for the best results.
