Question fuel pump

what would be better a 110gph or 130gph holley mechanical fuel pump for my 383 stroker?

i am building a 383 stroker when completed will have 500HP and 500FT/LBS of Torque it will be going in my 1991 rs

If your setup uses EFI (electronic fuel injection) you need an electric pump, not mechanical. In any case, assuming you do mean electrical I would get the larger pump as there is no downside except a few more $$$. I have no specific experience with Holley's pumps, though I think they buy them from Walbro.
