willl this fit...

will 285/35/18 tires on a 18" x 10.5" fit? or does it have to be 295/35/18 tires
and are these good tires if not then what are

When you get to those pages, just click on "Specs" on the top bar. You will get a table of tire sizes, with measurements and recommended wheel widths. In both cases you listed, the manufacturer will accept mounting the 285/35-18 on a wheel 9.5 - 11.0" wide. If you look up other manufacturers for their 295/35-18's, they recommend 10.0 - 11.5" wide wheels. So either tire will be acceptable on your 18x10.5" wheels. The 285 will be a little closer to the stock outside diameter, but the error on the 295 will be less than 2%.

It means your 295/35 tire would be 2% larger than the stock tires, and will throw off your odometer and speedometer by that amount, reading lower than actual speed and lower than the miles actually travelled.

Whether a tire rubs will depend on the offset of the wheels. Are you talking about the fronts and rears being 18x10.5"? What is the offset (or backspace) of the wheel?

then what size wont mess up my speedometer? or can that be fixed if i get the tire size changed with a hypertech programmer?

You can correct for tire diameter changes with a Hypertech Power Programmer (but only in 0.25" steps), or exactly by using LT1_Edit to change the size in your PCM, or have a mail-order programmer change it. The error for various sizes:

275/35-18 will read 0.3% faster than actual (not worth worrying about)
285/35-18 will read 0.8% slower than actual (less than 1/2 MPH at 60MPH)
295/35-18 will read 1.87% slower than actual (a little over 1 MPH at 60MPH)

The large diameter (295) also pushes the wheel slightly farther up into the wheel well, increasing the chances of rubbing, particularly on a lowered car.... depends a lot on the offset of the wheels.

This has got to be one of the best bookmarks as far as changing tires are concerned. Lays it right out there for you, no need to second guess what other people are saying.
