Is this the right backspacing? How far with they stick out/in?

Those are very popular wheels to put on an f-body. It might take some modification to get them to fit but if you scroll down and read through the "17x9.5" and 17x11" Wheels on a 4th Gen" section of the sticky posted below and at the top of the Wheels and tires section of the forum, most of your questions on offset and wheel size will be answered.
