Different keepers require different retainers....if you have stock retainers or almost any aftermarket street retainer, they use 7 deg. The 10 deg stuff is mostly Ti, or super lock race retainers. The 10 deg will hold up better under higher spring pressures and high RPMs. You can run either on the street, it doesnt matter...just a cost difference. Unless you use Ti super lock retainers though, you will be adding un-necessary weight.

What brand springs and retainers do you have? Single coil? Beehive? Spring pressure? I know you have crane stuff listed in your sig, but I assume you are upgrading....

If ya have super stout springs the 10* will pinch the tip of the stem off and you will loose a valve(800-1000PSI)
Ya don't have that problem so either will work good and no advantage in useing either one.
