what about those of us that have bowtie aluminum roller rockers and melling high volume oil pumps? I have at least 30 psi at idle, even when hotter an hell. on really cold mornings I've seen pegged 80 psi.

On my stock 350 TPI with 133K miles on it I had oil shoot out to the inner fenders and headers when setting lash after valve guide seal replacement.
Thats with the stock oil pump and my car idels at 650rpm's with oil pressure at 25lbs.

As for oil deflectors when setting lash I use a 3in. wide strip of cardboard about 4inches longer than the head and I slide it into the head and curle the ends up so it stays in the head and the oil just hits it and runs back down into the head and I just throw them away when I'm done.
