every problem is fixed, but one very odd problem

my car has been stumbling, hesitating, and missing for a long time after i installed the new motor. well everything is fixed, unplugged the o2s, bam hesitation gone, unplugged the maf, stumble gone. im running around with these unplugged, and the car has never ran better in the 5 years i have owned it. but there is one little problem left, the car wants to idle at 2000 rpm when i let my foot out of the clutch coasting to a stop. when i come to a stop the rpms very slowly drop to about 1400-1500 rpm idle. its wasteing my gas and the car is very loud when i come to a stop in traffic. ive heard it can be a tuning issue but im not to sure. heres what i have replaced and checked:

1. checked all hoses for leaks and intake
2. replaced iac
3. replaced iat
4. replaced ect
5. replaced map
6. replaced map pigtail harness
7. checked and cleaned egr
8. new injectors
9. replaced egr seloniod
10. replaced pcv
11. replaced tb gaskets
12. cleaned all grounds
13. cleaned tb
14. checked and adjusted throttle stop screw
15. cleaned air filter
16. pulled and replaced engine sensor fuse, pcm bat fuse and disconnected battery

my car has a rebuilt 360 ci motor with the hot cam, pp heads and intake, roller rockers, type r comp cams lifters, long tubes, no cats, all bolt ons, etc.the car was tuned by madwolf.

man this car runs like a raped ape, but this idle thing is driving me nuts. what else is there.

I don't think the car will ever run right in open loop (unplugged o2's and maf) without a tune

Why not replace the O2's rather than leave them unplugged?

well i would replace them if i had the money right now. ill just have to wait until payday.
