There are two. One on the water pump underneath it and the other on the driver side head, you might have messed up the one on the head while putting the headers on, or maybe the one on the water pump while doing the cam. Does it read spiratically, or never? When I first started mine up it wouldnt read for a minute then it would, you sure you bled the coolant system completely, if there are air pockets it could be reading the temp of the air in there.

The dash gauge is fed by the sensor in the drivers side head, between Cyls #1 and #3.

Is the low coolant light on? It could be causing the SES light to come on though.

I already asked this but you might not have seen it, are you sure you bled the system all the way, that could very well be your problem.

Id replace that sensor on the head, its right above the plugs on the driver head, inbetween 1 and 3. It shouldnt be too expensive, check out shoeboxes part # and price list

The low coolant switch is only wired to the idiot light on the dash, not through the PCM. No SES light for "low coolant".
