160 Thermostat
GM set the operating temp on the LT1 (and most of its other engines) high to maximize fuel economy, and minimize emissions. Lowering the operating temperature may result in less complete combustion, increasing emissions and reducing fuel mileage. Not likely you would notice the loss of fuel economy though.
Lowering the coolant temp reduces the thermal efficiency of the engine, reducing power. However, that loss can be offset by the reduction in the temperature of the intake air charge, and the ability to run a degree or two of additional timing. And, if you don't change the fan on/off temps in the PCM, the 160* t'stat is only going to make it run cooler at freeway speeds, not in heavy traffic or at idle.

Yeah typically you would tune the fans to kick on earlier with a lower thermostat, or buy/build a fan switch.
I've got a hypertech 160* stat for a LT1 if you want it. You can special order them through AutoZone for $25ish. I'll let you have mine (brand new) for $20. I'm in Overland Park, KS
