1991 3.1 RS Problem

My first guess would be a faulty coolant temperature sensor, not giving the ECM the correct engine temp. An EGR valve that is stuck open will cause it to idle poorly, or even stall. But it isn't going to make it overheat.
Under what conditions does it overheat - at idle in heavy traffic, at freeway speeds, under wide open throttle, all of the above? Can you hear the fans come on?
Have you scanned it for codes? That would be a good place to start?
