Motor running rough (carb)

Hey guys. We just pulled my friends 350 out of his car, motor is 6 months old, compression is perfect at 145 psi), changed his tranny (th400), and did the gaskets. Timing is set at 8 deg, carb is a road demon 600, new plugs, wires, cap, rotor. It idles fine, but when you go to put it in gear, it wants to stall or stalls. Also, off idle its sputtering a bit. It was doing this before we pulled it, only worse. I am thinking its the carburator. Can it be a bad power valve? Why does it want to stall when I go in gear? Any help would be great. Thanks guys!

does the car have a tach? if it does,what does it idle at? if it stays running long enough,what does it idle at (RPM wise) while its in gear? it should idle around 700 when its warm. (more if its got a big cam) if it doesnt idle around 700,u might need to bump up the idle a little bit. hope that helps
