How wide of a tire can go on the stock 16x8 wheel?
That depends on the tire profile among other things, but in a close to stock profile... 255
They aren't as common, so your selection will be limited. You're better off just finding a 245 that gets better traction. Unless you're doing it for looks, in which case, I don't think I could tell the 1cm difference from 30 feet away...

As noted above, not a lot of choices, but how wide you can go depends on:
-type of tire you need (street, road race, drag, all-purpose, etc.)
-diameter of tire you need (limit to stock diameter, or go larger for drag tires)
BFG, for example makes 16" tires in their Radial T/A line (all season radial) up to 295 section width that will mount on an 8" wide wheel. But they are in diameters ranging from 26.5" - 30.1" (versus a stock diameter of 25.7" or 26.1").
265/60-16 - 26.5"
275/65-16 - 30.1"
285/60-16 - 29.5"
295/50-16 - 27.6"

I'm asking because I saw a guy who has a WS6 Formula LT1 and it has some big *** tires on it, they werent drag radials I dont think. They looked to be around 285 or so. Is that possible on a WS6 wheel?
Yep, AFAIK they were 17x9, and came with 275/40 tires.
285 is about as big as you can go on a 17x9 before you start running into the same distortion issues as going bigger than 255 on a 16x8, unless you start increasing tire diameter.
