on the street? 1/4 mile? raod course?

with better then stock pads you would be fine on the stockers as long as your not autox or road course.

I run the stock front rotors and pads, and haven't noticed any problems pulling the car down reliably from near-130MPH trap speeds. I do run Baer slotted/cross-drilled rear rotors and PF Z-rated pads, and after 5 years and a few thousand miles, no signs of cracks.

As long as you torque everything down twice, you're rotors should be fine as far as warping. I still have my stockers on and they've stopped me from a few 120 mph runs.

I had stock brakes until the end of last year and had no problem with stopping from 140mph.

I see you've got a 2000 LS1, you've got better brakes/rotors (larger rotors) than the LT1's. You should have no problems stopping.
