Brakes locking up

Brakes locking up

Im not exactly a z28 guy yet, but I figured you guys could help me anyways...
I drive a 95 v6 Camaro. About a month ago put new back brakes on. Everything works fine, until lately, when going around 5-10 mph the brakes (I think back ones, maybe only 1 tire) completely lock up when barely pressed. Does not do this at higher speeds. Took brake I think is in question apart and put it all back together, same problem. Could not find a similar problem on google or on this board via search.... no idea whats going on. The locking up and high pitched sound of brakes is not only highly annoying, but I dont see what keeps it from doing it at higher more dangerous speeds. Any advice appreciated.
