I'm thinking of going over the valve covers but I've heard tons of horror stories about Taylor wires so I definetely don't want to use those. Any other ideas? What's the best place to shop for this stuff?

I don't know of any other wires other than taylors for going over the cover. I'm only having trouble out of mine due to one hitting the header, but all wires burn on the header .

I am personally running MSD Wires and have no issues burning wires because I am running them through stock locations.
