i don't have much knowledge of these, but I would think you will have to install it after the cats when the exhaust comes back into a single pipe. That would involve somehow installing an o2 bung. Your other option will be to just pick either the left back or the right bank and get readings from only one side.
My buddy just got one of these and I'm gonna just run it on one side for a while and then run it on the other side for a while.

Are you looking specifically at the single channel integrated 2-1/16" gauge and wideband controller? If that's the case, you could only put it in one bank. If you want to monitor both banks, they do make a dual-channel controller, but it is intended to interface with a laptop, and does not have its own display.
There are other wideband sensors available, including the LM-1, Dynojet Commander, Altronics, etc. Any particular reason you picked the AEM?
The Altronics "O2 Alert" is a dual channel monitor, with visual and audible alarms at pre-set A/F ratios, full data logging capacity, including the 2 O2 sensors and 2 other sensors of your choice, for example:
