Better resolution...can pick up on knock quicker as one sensor is monitoring each bank of cylinders. One sensor mounted on either side of the block as opposed to one on the side or front/back, where it's going to have a harder time picking on knock from the cylinders on the other side of the block.

EDIT: I just realized my answer didn't really answer the question (and that's something that bugs the hell out of me when people answer something I didn't ask, lol). Basically better monitoring results in finer control of the engine,resulting in more power and better fuel economy. Since the Corvette is a higher end car than the F-bodies, it's going to get more features like that that we don't get.

The b-bodies ran 2 sensors as well with their lower compression and 87 octane tuning. So I wouldn't buy the Vette is special explaination. I haven't done much work on 4th gens, how is the clearance there, that would be my suspect.

It is awful with the drain hole plug being right next to the engine mount. That would be my guess as well - not a lot of room to put it.
