What is louder at idle an Ultra Flow or a Hooker muffler ? Does the ultra flow come in a dual outlet design or is it single only ?

Both are very quiet at idle(Hooker might be a bit louder). If you want a somewhat loud idle, Flowmaster would do the trick(if you don't care too much about flow).

Flowmaster still out flows stock by a very large margin.

Ultra flo isn't in the same category as a Flowmaster. They are "strait through" style muffler. The only thing that flows the same or better is the SLP mufflers.

Magnaflow, Flowmaster and Turbo styles all have around the same flow.
