250 is about as high as you can get w/out boiling over.
Let the engine cool down for a while, then add coolant, make sure the radiator and reservoir are both full.
Then with the engine running and warming up, open the bleeder screw until coolant comes out- sometimes it will bubble out for a while, just let it come out until there's no air. LT1's can sometimes be tricky to get the air out of. 225-230 is usually about the hottest it should get if it's just sitting and cycling the fans.

BTW don't add coolant to an overheating engine- bad things can happen...

You need to make sure both bleeders are open when you're filling the radiator with coolant, otherwise you'll get tons of air.

The bleeder screws are located up by the water pump. Look at the hoses leading to the water pump, you'll see two screws. Be careful you don't drop them if you take them all of the way out.

If you don't know what bleeders are, you surely have air pockets in your system.
