Running temp\bleeding the system??

Running temp\bleeding the system??
Ok I know everyone ask this but it just seem strange to me that these cars run so hot and when they are not moving and no fans on the temp just climbs up and up until the fans kick on once again.
Info for question I have 160 with manual fan switch
So here is my question. On the highway no AC I will run 180-185.
On the highway ac on I will run 190. In town no AC in stop and go traffic I will run 210 - 220. In town with AC on I will run 190-200. But then everyonce in a great while I will run 210 - 235 on those really hot days. Is this normal?
