Painless Fan Relay Install Question - Sensor

Okay so did a little searching and was trying to do this in the dark so I may have just missed it....

I am trying to install a painless wiring fan relay to get the fans to kick on a little lower. It is provided with a temp sensor that is quite large (one for intake or head). I am unsure if I should remove the one already in the head (knowing it will then kill my dash temp gauge) or put it somewhere else? Any suggestions of where I could do this the easiest? Could I simply just tap the sensor in the water pump? Tap the sensor already in the block?

Please help! This is the reason I hate electrical stuff!!!!
