It's a temp sensor problem most likely, make sure that they are all working properly. Are you sure nothing is making the thermostat stick?

Sticky stat sounds like the culprit to me. I'd investigate the stat further.

If white smoke poured out on startup, you have a blown head gasket.

Did you bleed the air out of the system when you filled it back up?

White smoke on start up indicates you probably have a head gasket leak.

Re: overheating to well over 300 degrees

I am having the same sort of problem. I keep trying to bleed the stupid thing, but it seems like an endless amount of air is coming out. When I open the bleeder on the large hose/thermostat housing nothing but coolant comes out, and when I open the bleeder on the smaller hose it will spurt coolant then some air then some coolant and so on. I just can't figure it out. Someone please help.

When Bleeding the coolant system- make sure you have water in the radiator, put your overflow and radiator cap on and down sealed tight. Start the car and let it heat up a bit and make sure the thermostat opens, then find the bleeder screw on top of the T-stat housing and crack it open. Air WILL spray out, and if it is hot, it will more than likely be steam. You want it to bleed until a steady stream of water SHOOTS out, belive me- it will shoot out.
