Oil Temp/EGT
I've heard that oil temp may be a better indicator (better than water temp) of how hot the engine is really running and that for best performance there's a range of desired oil temp that works best. Anyone know what that typical temp range is for an LT1?
Is there an oil pan that has provisions for mounting an oil temp sensor? Canton?

And, by the way, anyone have success with monitoring EGTs? Where do you monitor the EGT? I'm looking for a single point rather than at each cylinder.

Ya can't get EGT from a single point,it has to be read within 3" of the exhaust port on each cyl.
Oil temp is generally good at 175-225 Tops--- 180-200 being nominal for an engine in good shape and running hard(circle track or road coarse) Ya can put a temp guage in any pan by welding in a fitting or adapters from the oil level sender.

I've noticed in my car, the oil temperature tracks the coolant temp fairly closely.
I have the oil temp sensor threaded into a hole tapped in the oil drain plug:
