A pump can't suck a pan dry unless the oil never gets back to the pump.
That can be caused by a few things, but most times it's because there is NO windage tray in the motor at all, even the stock plate, if you don't have one the motor can "suck itself dry" because the oil never stays in the bottom of the pan.
If you have the pan off to change the pump CHANGE THE OIL PAN TOO!
You can always add on a accusump and never really worry about sucking the pan dry.
Personally I've used both pans with trays in them and add on trays and for a LT1 in a F-body, C4 or Imp a Canton pan is the way to go.
