Is it normal for the oil in my catch can to look like chocolate milk (pics)

It was a blown head gasket, the #8 cylinder filled up and the motor locked up when I tried to start it.

After just 10 days, my catch can was full again..it only holds about 8oz (1cup) I carefully used a turkey baster and sucked the liquid out from the bottom first, and it was all clear, not green....but I'll be watching my radiator overflow and radiator coolant level real closely for a while to make sure.....
I jst don't get that much condensation building up..but we have had some cold and wet/damp weather for the last month so I guess alot of water vapor/humidity could be getting sucked in from the valve cover breather.
