How hard is it to remove the stock exhaust for a 95Z28 with a single cat?
Do I need to do any cutting, will I need a lift? Or will Jackstands do just fine?

I assume your taking about the cat back, then you can do it with ramps or jack stands. You will need to cut the pipe where it goes over the axle.

if you're talking about the catback, its actually really easy. The hardest part by far is removing the old system. Having something to cut the old pipes quickly really helps. I just put in my catback though with just ramps, and this pipe cutter thingie(its hard to describe), took about 2 hours. With my hooker catback everything just clamps together so it was really easy.

Also: there are just two bolts to undo at the cat, and one at the exhaust hanger on the passenger side of the muffler. I had to make two cuts since I couldn't raise the car very high, one right before the muffler(after the axle), and one right before the place where the pipe bends up for the axle. Also I had to remove the black crossmember piece right after the cat.
