heating/coolant problems on 95 z28

i bought this car 3 weeks ago and noticed that the heater never really blew warm air and when the car idles for ten minutes it would get hot. even if the needle was almost to the red it still looked like the driver side fan wasnt ever on. the pass side did come on. anyways i flushed the system and put in a new 180 thermostat. the heater works ok and the car didnt run as hot. i still never see that one fan come on ever. i put the car on a rack and noticed the temp sender was unplugged.....on purpose maybe? i plugged it back in and the car runs ok but still a little on the warm side. i still never see the one fan come on. also when i plugged that sensor in i got a low coolant light which doesnt make sense. are those 2 sensors linked at all? i keep trying to bled the system and no air ever comes out. any suggestions? why would the temp sensor be unplugged? when does the driver side fan suppose to come on? why would the low coolant light come on? i just want to make everything operate good with no lights.
