Bad engine temp sensor keeping the ecu running in open loop?? Just a guess.

Then you probably picked up a little bit on the mpg since you did everything at once. really though the difference between a 160 tstat and a 180 is likely a very small difference in mileage. You'd prolly notice a bigger difference switching the metal in your valve spring retainers.

I dropped it off at the shop today, and they'll put it on the scanner and hopefully something obvious pops out at them, but he wasn't to optimistic.

It's got brand new wires, newish fuel filter, newish air filter, newish plugs (4 tip platinum--perhaps that has something to do with it.) Brand new AC Delco O2 sensors when the Headers were installed.

The mods on the car are Mid Length Headers, and a Borla Catback.

If the shop does not find anything, what all could I have them look at, or try myself?

Well, if you exhaust all the easier options, check out the opti. When I first got my vette it got poor gas mileage, and a tuneup didn't help. 15 months later the opti bearing went out, and after replacing the opti the mileage went up a few mpg. The other symptoms were an occasional mild hiccup around 4 or 5k rpm, and popping on overrun. Never threw a code.
