Can too much oil hurt an LT-1?
You say they changed the oil pan? I assume the pre-filled the pan to see how much oil they should put in it first, then test fit the pan to the motor, provided a dipstick and marked the dipstick to the proper length.
Different pans take different amounts of oil.
I have a six quart Canton pan, plus an oil filter. I still only run
4 1/2-5 quarts of oil and according to my engine builder and Canton, that is just fine for my motor.

Maybe its a "better" pan/filter setup you have? There is a big filter which allows some more oil (PF-30/5?), there is also a variance of .5qt I think depending on what year pan you have.
Too much oil, will end up foaming up when the crank whips it to death, this should show up as froth on your dipstick if you are at that point. 1qt or so over probably wont be a problem, but go by your dipstick...

Don't fill in more than 5 quarts!!!
I had to drain it, because the PCV was sucking up oil through the TB and ruined my injectors (probably). You definiately don't want to have oil in your intake->on your injectors->on your valves->in your chambers. period.
