You might as well. If they go out you're gonna have to do all of the valvesprings all over again.

Do you need to pull the head off to do the valve seals? I have yet to do valve seals so I am not entirely sure.

If you are going to change valve springs, you'll need to remove the valve seals. It's pretty hard to remove all the valve seals without damaging some of them.

From what I remember, and I could be wrong. The valve seats/locators won't come off with the valve seals installed. You will need the seats remove to upgrade, or if you are going to run the stock seats they'll need to be remove to shim the springs.

Just do a search, you should pull up some old posts with pics on how to correctly modify the baffles in the valve covers to accomodate the bigger rockers.

Just grab the baffles in the valve covers with a vice grip where they are contacting, and bend them down. They have like an L-shaped design, and all you are going to do is basically straighten the L into an I. Only need to do this where they are hitting, there is one spot on each baffle where they hit. You will see if you look once you get the RR's.

About the seals, I never had to touch the seals to replace my valvesprings, but the last time I had my valvesprings replaced LE did the work so I am not sure if they replaced them or not.
