you already have your answers above...

1. replace your thermostat with one designed for an LT1,

2. you need tuning, preferably dyno tuning. If you can't do that, at least get a log on a scanner and preferebly a WB capable dyno as well, send it to Bryan @ PCM4LESS and get a retune, what you have is NOT working.

3. It wouldn't hurt to swap your fuel pump for a decent Walboro unit, thats one thing you do NOT want to crap out on you while on a WOT run down the track.
