Its not really a big deal really just start unscrewing what you need to remove, first will be the two bolts under the steering wheel for the bottom cover,

your biggest problem will be popping the top peice off as its clipped down and will more then likely break.

The big picnic size piece is not clipped down, it uses industrial strength velcro and if your VERY careful you can get it off without breaking it.
With that said I have a new piece waiting to be installed cause I broke mine into 3 pieces while trying to pry it off.

is the big piece you guys are talking about the piece that is the lighter grey color that goes all the way to the windshield or is it the really dark black piece in the front?

It's not that bad really, just remove the pillar trim panels and work a door panel removal tool up under the dash pad. Take your time and wiggle it down the line until you feel the velcro, and pop it off. I've had mine out about 5 times now. Nervous about it breaking every time, but it hasn't yet.

That being said, I'm sure next time I go to take it out it'll shatter into a million pieces.

Just had mine out. The windshield side had velcro - the dash side had clips pushed down into holes in the dash (and one piece of velcro where the point is). Maybe its different in a vert?

Are you talking about the shroud around the gauge cluster as the "black piece"? If you are - I saw a couple of screws under the gray pad. Lift the gray pad up slowly and gently in the front - I went along slowly with a screwdriver to find the clips and that is where I pried it up. Errant prying will crack it for sure. Once the front is up its a no brainer.
