Yup, this sensor is strictly for low coolant light. No SES Light or any other problems will arise from unplugging it. They are famous for going bad.. Mine has been unplugged for 3 years now...
Make sure to check your coolant Level on a regular basis though.

IIRC when the engine gets hot it sucks coolant out of the overfow tank and when it cools off it gets back in. If you put extra in it will boil out the resivour tank. I'd go ahead and verify your tstat is working correctly and replace the radiator cap. (it's like $10 at GM)
