I have a 2001 SS Camaro and want to put a new motor. Any ideas on which one is best?

Way to vague...I mean, you want a new "motor". Ok, what are your goals, what's wrong with the one you have now? Do you even HAVE one in the car now? Why do you want to change, etc?

As for tires, are you asking what's the widest you can fit under a stock quarter-panel? or are you going to mini-tub the car and run MT's? Again, what are your plans, and limitations?

What's your budget for the engine? One of our supporting vendors sells this:

You can run 315/35-17 tires on 17x11" 50mm offset wheels, or 28x10.5-15W or 28x11.5-15 slicks on 15x10" 7.5" BS wheels with some minor hammering.
