160 degree thermostat. Engine runs 195 degrees. Problem?

I have a very old Hypertech 160 degree thermostat in the motor and my temps are routinely 196-200 degrees year round.

Is this normal?
Is there a problem with the thermostat.

The thermostat does not control any temperture above 160*F. The PCM fan settings do that. The t'stat simply controls the engine's MINIMUM operating temperature (160*F before it opens), not the MAXIMUM.

What is the generally accepted engine temp for performance?

I run my 381 stroker at 195*F, based on engine dyno testing.
