When the Street Twin first came out, they did not have the adjustable master. They included parts to sleeve the stock slave cylinder, and recommended that you cut 0.100" off the fork ball. It worked fine that way, although a lot of people had problems with the slave cylinder leaking. Don't know if they still have the same parts available.
The reason for the bigger master is to provide more fork travel to ensure that the disks do not drag when the clutch is totally disengaged. Some folks need them while others do not. It is not "easily" possible to get more fork travel using the stock master.
