When I unplug the MAF it will make the car run in speed density mode BUT will it throw a SES light? Then I have to CHECK Speed Density in tunercat correct? Or does it even matter to have speed density selected in the ECM SWITCH table?

Pretty sure you'd have to check speed density.

if u check speed density it will tell the PCM to not look for your MAF. Then you wont see a SES light.

You just told yourself the answer

If you unplug the MAF the car will run in speed density mode (since there is no MAF) and it will also throw a code (since there is no MAF)

If, for whatever reason, you want to run speed density simply change the speed density switch as you already suggested. Keep in mind that tuning an SD engine system is MUCH more intensive (see sig).

If there's nothing wrong with the MAF I see no reason to go SD.
