mail order tune?

i have a 95 bird that im planning on building up, starting with a new short block that will be about 11:1 compression and a 383, and going with either the le3 kit or the ai200 top end kits, with intake porting and a 58mm throttle body, along with bigger injectors and other things, and i was just wondering how well a mail order tune can be when im doing this much modification to the motor, will i have to get a dyno tune for it to run properly? or can i just call up one of these places and tell them all this and have them burn me an ecm? and if i end up doing that i just dont want to worry about it running rough or lean or anything, anyone have any recommendations of a place to go with?
