what is the normal operating temp?

i know this has been discussed here a lot, i did a search about it and got a ton of post, but i didnt find one that answered my question which is this:

What is the normal operating temperature for my 84 z28 305 5.0 HO?

As some of you have seen i'm sure, i posted a few times about the thermostat and some heat issues i had. I put in a 180* thermostat and took out the 195* that was in there because it failed closed and caused the temp to rise up just below the red. Before I did this my temp gauge was always about level or a bit above the 220 mark. when i put in the 180* thermostat, the temperature would stay at or slightly above the second notch on the gauge(the one between 100 and 220) even in slight traffic. it cant be running at that low of temp now could it? according to the temp gauge, what would that be? the car runs fine and smooth even at this lower temp. is this ok on the engine? what i really need to know is this normal operating temperature for my car? thanks for the help.

195* is the operating temp.

Fans kick on at 227* with the stock fan switch
(if you have electric ones)

Yeah, that part is critical.
