it could be a lack of fuel. draining the fuel bowl and running out right at the shift, when it dies it gives the pump time to recover.

Is this the stock carb (quadrajet 4bbl)? If so, you might want to give it a rebuild and replace all of the vacuum lines going to and from it. I've rebuilt a couple of Holleys and as long as you take it one step at a time they aren't that bad to do, q-jets are kind of a mystery to me b/c the first thing i did was dump that and put a holley 4bbl on.

It could be a number of things, first ones that pop into my head are
1.) secondaries opening too soon, are they vacuum or mechanically operated?
2.) Accelerator pump cam could be worn down or broken
3.) Vacuum leak, sometimes you will lose a hose off of the base or side of the carb that will cause some funny things to happen

just some ideas to think about

if you get on it for the same amount of time in a different gear does it do the same thing?

i would also check all of the vacuum lines for a leak.
