Found quite a bit of my problem was in the parts...
Okay, I had a post in which I asked about a tune-up, and mentioned it stalling at low RPMs. Well, I started pulling it apart and found some less than desirable parts on it. Bottom of the line wires, plugs, crappy air filter. With just those minor things changed, it already runs better. The plugs I pulled out were clean, and the wires seemed okay (I didn't test them). Most of the accessories (water pump, alternator, ect) are low buck aftermarket replacements, and while they will "work" there is something to be said about upgrading, or at least staying with OEM parts.
Many may disagree with me, but it has been my experience (even with this) that you only hurt yourself trying to go cheap. Save the money and do it right, you'll be happier in the long run!
Now, if I can get the wife to let me spring for a roller cam, and some new heads, I'll be happy!

Agreed, there is no use in half-assing the job, when you can spend a few more dollars and have it done the right way. I know people that get their parts from junkyards off of old cars, and while in some cases, it may be a way out when you are tight on cash, but to do it for more than 1-2 applications is not a wise choice.
This is especially true when it comes to tune up components such as air filters, oil filters, and spark plugs like you mentioned. Why go cheap on a tune up when you can spend 20$ extra dollars and get that increased performance and reliability, and also, that peice of mind?
