it pretty much stumbles at low or part throttle

Are there any SES codes present? Might want to check over the engine for any noticable vacuum leaks or exhaust leaks before the 02 sensors.

Is there any codes being thrown? How's your fuel pressure?

Edit: Just as 2000GTP said, I was gonna suggest to check for a vacuum leak.

i think the fuel pressures low cause the fuel pump has to prime before i start it

That's normal. Check your fuel pressure first. I don't know the specs for an LS1 though.

k i had it checked out at first after its been sitting if i put it in the on position it read a lil under 20psi n when i started it it read a lil under 60 the second time i tried it i let it run for a lil n it read 50 on the on position n 60 after i turned it on

i also checked the obdII n i have a bad o2 code n its been there before and after i installed the header and ory

so im thinking about gettin new o2 sensors and maf what do yall think could that be causing my stumbling

O2's have a big effect on engine function, if you have a o2 code, the corresponding o2 sensor should be fixed/replaced. I would try cleaning your MAF and looking around for vacuum leaks.
