Re: tire size
You are asking about tires, but the sizes you are quoting are wheel sizes.
Your stock Z28 wheels are 16 x 8.0", and use a 245/50-16 tire or a 235/55-16 tire. The original tire size installed at the factory is shown on the label on the driver's door. You could consider going up to a 255/50-16, but that size is getting harder to find, and not a lot of good choices.
In no case would it make any sense to downsize your wheels to only 7.0" or 7.5" wide. Most people who go to 17" wheels opt for 17 x 9.5" wheels with 275/40-17 tires. Wheel also need to have the correct bolt circle and the correct offset in order to fit on your car.
Which is more important to you - "ride quality", straight line traction, cornering grip, wet weather traction??????

Re: tire size
sorry meant wheel sizes not tire sizes. and ride quality is probably most important, its my daily driver not really a race car but still id like it to go fast. the only reason i asked is i found some good deals on wheel/tire combos and was lookin for advice on if a 16x7.5 would work or if it needed to be wider. i think ill look elsewhere for a wider wheel.thanks injuneer.

Re: tire size
16x8 is the stock Z28 wheel size and I can't think of anyone running something narrower than 8".
Personally I don't think the 16x8's do a good enough job filling the wheel wells. It really sets the rear off when you see some 275 tires out back.
