I've got AFS replica ZR-1's, including the 17"x11" +50mm rears. They're older, made in the USA (I think the new ones are made overseas).
I massaged the inner fenders in a few spots using a hammer, and removed a portion of the jounce bumpers (bump stops) and brackets using a grinder. I then sprayed the inner fender with undercoating stuff. I was able to ensure plenty of clearance from full compression to full droop of the rear axle.
The rear end of the car was noticeably off-center by at least half and inch after installing the big wheels with the 315 tires. It was obviously that way from the factory, but I couldn't tell with the 245's on it. I corrected this by removing the stock panhard rod, and replacing it with an Edelbrock adjustable unit. I did not need to roll/trim/modify the outer fenders.
Since doing all of that I've had no issues, and routinely jack the car from the side (one corner at a time) without any problems.
There's a great set of pictures on Injuneer's page that show exactly what you need to do.
*Word has it that production tolerances may mean that necessary modifications may vary a bit from car to car.
