Are you talking a Carb'd LT1 or a Carb'd SBC (Gen I)?
With a Gen I SBC you will have issues finding a distributor to clear the windshield. A carb'd LT1 would be easier, but I would stick with fuel injection. Don't forget with your swap you need a new rear end (posi), transmission, shocks, gauges, pcm...
