Question rear sway bar question

Help me understand something.

As far as I know adding a bigger rear sway bar to our cars causes the rear end to come around easier if you get on the gas too hard, too fast when coming around a corner.

If this is true why do all the drift guys remove the rear bar? I would think they would want the biggest rear bar they could find.

I'm so confused

I don't really have any interest in drifting, I am just trying to understand the way it all works.
