Just unbolt the old one, and I adjusted mine to the stock lenth since everything else was stock. Then adjust it as necessary down the road.

The easiest way to adjust it is to drop a plumb bob down each fender and measure to the wheels until centered. This method will get you close. The best way to do it is to measure the chassis and find the centerline of the chassis. Once you find the centerline of the chassis measure to the wheels and adjust until the car is centered over the axle. Make sure when adjusting your panhard rod the car is on the ground and at ride height. For a street application the plumb bob will work fine.

Would a mechanic be able to do it with an alignment machine? I was just thinking of letting him deal with it when I get my shocks installed.

a mechanic can do it, the question always comes back to how much is it worth to you? Either he can spend a half hour to do it and charge you for it, or you can do it in a half hour for free. It's your pick, but it's an easy enough job........less time consuming than adjusting coilovers or adj LCAs anyways.
